There is only one word to describe these cheesecake red velvet brownie cake balls.
Heavenly.
A second word would probably have to be…fattening. But, so so worth every calorie.
As I explained in my first post, I try to eat healthy. However, I love to bake desserts. I try to give them away most of the time so that I don’t eat everything I bake. I had (some) self-control when I made these considering that I only ate two…two really big cake balls..
I found this recipe on Pinterest and it came from thedomesticrebel’s website. I edited her recipe a little by actually adding brownies (hers are called Red Velvet Cheesecake Brownie Balls, but it tricked me into thinking brownies were actually involved when they weren’t. 😦 )
It takes a few hours to make these delicious balls of sugar, so make sure you have some time to spare. You just bake red velvet cake (undercook it just a little), brownies (a little squishy), and buy a cheesecake from the store (or be an overachiever and make your own). Roll up the cheesecake into balls and freeze those for 2-3 hours while you cook and cool your brownies and cake.
I have the toughest time with forming red velvet into balls—it is always way too cakey for me. So, I used very little red velvet in my balls. I flattened the brownies, then flattened the red velvet cake (as much as possible) on top of the brownies. Then wrap those around the cheesecake balls. The key is to use the brownie to seal in the red velvet, otherwise it gets cakey and just falls off the cheesecake. Freeze again, dip in white chocolate (and sprinkles, if you’d like), and freeze until ready to devour.
